What is a French Macaron?
A macaron is made by mixing egg whites, sugar, icing sugar and ground almonds. It’s then piped into small round discs (called a shell) and baked. The shells are sandwiched together and filled with ganache, buttercream, jam, curd or any combination of fillings.
Are these the same as a macaroon?
NOPE! A macaroon is made with shredded coconut and egg mixture baked into a soft cookie, typically topped with a glace cherry.
Why are they so expensive?
The cost of raw ingredients plus the time and expertise involved in making them. Ground almonds and egg whites are the two main ingredients – Almonds are very expensive. There is a delicate balance getting the right consistency and bake on a macaron and mine are all made by hand.
